Talamanca’s Potato & Chorizo Snack

½ mature chorizo sausage, roughly chopped
1 packet cherry tomatoes, halved
2 red onions, roughly chopped
100g emmenthaler cheese, grated
1 tbsp (15ml) chilli oil
2 tbsp (30ml) butter
4 potatoes, washed

1. Pop the potatoes (skins on) in a medium pot filled with water and a pinch of salt and bring to the boil until the potatoes are soft.
2. Meanwhile heat the chilli oil in a medium frying pan, add the cherry tomatoes, red onion and chorizo all at once and fry for about 8 minutes until the chorizo is cooked.
3. When the potatoes are cooked, cut an incision in the middle of each potato, split them slightly taking care not to burn, lightly butter and let the butter melt in. Follow with some grated emmenthal in the middle.
4. Open up the potato, pop the chorizo, onion and cherry tomatoes on the inside, follow with some more grated emmenthal and, boom! You’re ready to eat your heart out!
